Adzuki Bean Hummus

Ingredients:

2/3 cup dried adzuki beans

2 cups water (for soaking)

2 cups water (for cooking)

1 Tbs "Put a Pork in It" www.spiceroy.net/product-page/put-a-pork-in-it-brine-and-cure

1/2 cup "Put a Pork in It" EVOO www.spiceroy.net/product-page/put-a-pork-in-it-spiced-oil

1 Tbs Water

 

Equipment:

Measuring Cups / Spoons

Medium Saucepan with matching lid

1 qt size food safe container with matching lid

Strainer / colander

food processor

1 cup size food safe container with matching lid for storage

Refrigerator

 

Instructions:

Combine dried Adzuki beans and 2 cups of water in a food safe container. Store in refrigerator overnight (6-8 hours) to let soak.

Gather remaining ingredients and equipment.

Drain out the water from your beans, then place into a medium saucepan with fresh water.

Add in the 1 Tablespoon of "Put a Pork in It" and simmer it all for 30 minutes on medium-low heat.

Drain out the liquid and let beans cool. Can refrigerate for 2 hours, or make hot/warm hummus.

Place beans into a food processor.

Begin blending, gradually adding in the EVOO until your desired consistency is reached. For me, it was about 1/2 a cup's worth.

Finish blending with the 1 Tbs of water. It helps lift it a bit.

Add in any additional salt if desired, I didn't find a need for it.
